One of the unique things about the Asian culture is that their approach to food and eating is to create wellness. Saute your curry paste in oil on a moderate to low heat until fragrant and your oil has absorbed all of your curry paste. NB!! Be careful not to burn your paste
Then add fish sauce and palm sugar and mix in with your curry paste.
Deglaze your pan with coconut milk and bring to a simmer or until your paste has dissolved into your coconut milk.
Add the meat of choice and only cook it till just cooked, then add the remaining ingredients and simmer for at least 5 min.
The best addition for this curry would be jasmine rice but if you are up for an adventure why not try it with a roti. I will have our famous roti recipe in the coming month
Fresh coriander is the best as a lovely garnish
